Crispy Bacon & Egg Power Bowl

Steynsburg pork

INGREDIENTS

  • 4 slices of crispy Steynsburg Pork bacon 
  • 2 large eggs (boiled, poached, or fried) 
  • 1 cup cooked quinoa or brown rice (for a hearty base)
  • 1/2 cup avocado, sliced 
  • 1/2 cup cherry tomatoes, halved 
  • A handful of baby spinach or mixed greens 
  • 1 tbsp feta cheese or goat cheese (optional) 
  • 1 tbsp olive oil or balsamic glaze for drizzling
  • Salt & pepper to taste
  • Chili flakes (optional)

STEP 1

Fry the Steynsburg Pork bacon in a pan until perfectly crispy. Let it drain on a paper towel, then crumble or slice it.

STEP 2

Cook the eggs to your preference—soft-boiled for a runny yolk, poached for something lighter, or fried for a crispy edge.

STEP 3

Start with a base of warm quinoa or brown rice.

Add a handful of baby spinach or greens for freshness.

STEP 4

Sprinkle with feta cheese (if using), a pinch of salt, pepper, and a dash of chili flakes for a little kick.

Drizzle with olive oil or a touch of balsamic glaze for extra flavor.
