Dark Chocolate Truffles with Crispy Bacon & Orange Ganache
INGREDIENTS
For the Bacon-Orange Ganache:

STEP 1
Candy the Bacon:
In a pan over medium heat, cook the chopped bacon until crispy.
Sprinkle in the brown sugar and stir until the bacon becomes caramelized and glossy.
Transfer to a plate lined with parchment paper and let it cool. It will crisp up as it cools.
STEP 2
Make the Orange Ganache:
In a small saucepan, heat the heavy cream, orange zest, and orange juice over medium heat until it just starts to simmer (don’t boil!).
Remove from heat and pour over the chopped dark chocolate in a bowl. Let it sit for 1 minute, then stir until smooth.
Add the butter and mix until silky.
Fold in the candied bacon bits, ensuring they’re evenly distributed.
Chill the ganache in the fridge for about 1 hour until firm.
STEP 3
Shape the Truffles:
Using a small spoon or melon baller, scoop out portions of the ganache and roll them into balls with your hands.
Place them on a parchment-lined tray and freeze for 15 minutes to firm up.
STEP 4
Coat in Dark Chocolate:
Melt the dark chocolate in a heatproof bowl over simmering water (double boiler method). Stir until smooth.
Using a fork or dipping tool, roll each truffle in the melted chocolate, letting excess drip off.
Place back on the parchment-lined tray and let them set at room temperature or in the fridge.
Finishing Touch
Once the chocolate coating is set, dust the truffles with cocoa powder for a velvety finish.
