Chicken-Wrapped Pork Medallions

STEP 1
Prepare the Pork Medallions
Slice the pork tenderloin into medallions of even thickness. Pat dry with a paper towel to ensure better searing.
STEP 2
Marinate for Flavor
In a small bowl, mix olive oil, garlic, rosemary, smoked paprika, salt, and pepper. Rub this marinade over the pork medallions and chicken slices. Let it rest for 15–20 minutes (or overnight in the fridge for deeper flavor).
STEP 3
Wrap the Pork with Chicken
Take each pork medallion and wrap it tightly with a thin slice of chicken. Secure with kitchen twine or toothpicks to hold the wrap in place.
