Herb & Garlic Pork With
Summer Ratatouille
INGREDIENTS
- 1.5 kg pork loin
- Salt & pepper
- 3 tbsp olive oil
- ½ cup honey
- 2 tbsp wholegrain mustard
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 cup fresh cranberries
- ½ cup chicken stock
Instructions
- Preheat oven to 180°C.
- Season pork generously with salt and pepper. Sear all sides in hot oil until golden.
- Mix honey, mustard, soy sauce, and garlic.
- Place pork in a roasting dish, brush with glaze, add cranberries and stock.
- Roast 1 hour, basting every 15 minutes.
- Rest 10 minutes, slice, spoon over pan juices, and serve.
