Bacon-Wrapped Stuffed Pork Tenderloin

INGREDIENTS

  • 1 large pork tenderloin

  • Salt & pepper

  • 1 cup spinach, sautéed

  • ½ cup feta, crumbled

  • 2 cloves garlic, minced

  • 8–10 rashers streaky bacon

Instructions

  1. Butterfly the tenderloin and flatten gently.

  2. Season and fill with spinach, feta, and garlic.

  3. Roll tightly and wrap with bacon.

  4. Roast at 200°C for 35–40 minutes.

  5. Rest 5 minutes before slicing into rounds.
