Slow-Cooked Pork Potjie

Serves: 6, Prep time: 20 min, Cook time: 2½ hours

INGREDIENTS

  • 1.5 kg pork shoulder (cubed)
  • 2 onions (chopped)
  • 3 carrots (sliced)
  • 3 potatoes (chunked)
  • 1 sweet potato (optional)
  • 2 cloves garlic (crushed)
  • 1 tin chopped tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp chutney
  • 1 tbsp Worcestershire sauce
  • 1 cup chicken stock
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt & black pepper
  • 2 tbsp cooking oil
  • Fresh parsley

METHOD

Step 1: Brown the pork

  • Slow-cook pork with spices until tender.
  • Shred and lightly crisp in a pan.
  • Spoon into lettuce cups.
  • Perfect with: Tomato & avocado

Step 2: Build the flavour base

  • Add onions and garlic.
  • Cook until soft and fragrant.
  • Stir in:
    paprika, thyme, tomato paste, chutney, and Worcestershire sauce.

Step 3: Slow cook

  • Return pork to the pot.
  • Add chopped tomatoes and stock.
  • Simmer gently for about 30 minutes.

Step 4: Add vegetables

  • Layer carrots, potatoes, and sweet potato on top.
  • Close the lid and cook slowly over gentle coals for another 1½–2 hours.
  • Do not stir too much — let the flavours develop naturally.

Step 5: Serve

Once the pork is tender and the vegetables are soft:

Garnish with parsley and serve with:

  • pap
  • fresh bread
  • rice
  • or samp
