Sticky Pineapple Chilli

Pork Skewers

Serves: 8-10, Prep time: 15 min, Cook time: 30 min

INGREDIENTS

  • 600 g pork shoulder or fillet (cubed)
  • 1 cup fresh pineapple chunks
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sweet chilli sauce
  • 1 tbsp lemon juice
  • 2 cloves garlic (crushed)
  • 1 tsp grated ginger
  • ½ tsp chilli flakes
  • 1 tbsp olive oil
  • Salt & pepper
  • Skewers

INGREDIENTS

Step 1: Make the marinade

  • Mix:
  • soy sauce
  • honey
  • sweet chilli sauce
  • lemon juice
  • garlic
  • ginger
  • chilli flakes
  • olive oil
  • Add pork cubes and marinate for at least 30 minutes (longer = deeper flavour)

Step 2: Build the skewers

  • Thread pork and pineapple alternately onto skewers.
  • The pineapple caramelises beautifully while cooking and keeps the pork tender.

Step 3: Braai or grill

  • Cook over medium coals or a hot grill for 10–12 minutes, turning regularly.
  • Brush leftover marinade over skewers while cooking for extra glaze.
  • Cook until slightly charred and sticky on the edges.

Step 4: Serve

  • Finish with:
  • fresh coriander
  • lime wedges
  • or toasted sesame seeds
  • Serve with rice, flatbread, or a crunchy slaw.
