Bacon & Egg Avocado Boats

INGREDIENTS

  • 1 large avocado, halved and pitted

  • 2 slices bacon, cooked and crumbled

  • 2 eggs

  • Salt & pepper to taste

  • Optional: Sprinkle of cheddar cheese or chili flakes

STEP 1

Preheat oven to 200°C

STEP 2

Scoop out a little extra avocado to make space for the egg

STEP 3

Crack an egg into each avocado half, top with bacon, and season.

STEP 4

Bake for 12–15 minutes until eggs are set.

 

Serve warm with a side of fresh greens! 🥬
