Chicken-Wrapped Pork Medallions. A Juicy, Flavor-Packed Feast

INGREDIENTS (Serves 4)

For the Medallions:

  • 8 pork medallions (cut from tenderloin, about 2cm thick) 🐖
  • 4 boneless, skinless chicken thighs (cut in half) 🍗
  • 8 toothpicks or butcher’s twine
  • Salt & black pepper to taste

For the Marinade:

  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced 🧄
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or rosemary
  • 1 tsp honey (optional, for caramelization)

For Grilling/Roasting:

  • 1 tbsp butter (for basting) 🧈
  • Fresh parsley for garnish 🌿

STEP 1

Marinate for Maximum Flavor
In a bowl, whisk together olive oil, soy sauce, Dijon mustard, garlic, paprika, thyme, and honey.
Season the pork medallions with salt and pepper, then coat them in the marinade.
Let them marinate for 30 minutes (or up to 4 hours for deeper flavor).

STEP 2

Wrap with Chicken
Take each pork medallion and wrap it tightly with a half chicken thigh, securing with a toothpick or butcher’s twine.
This locks in moisture and creates an extra juicy bite! 🤤

STEP 3

🔥 Grilling Method:

Preheat grill to medium-high heat.
Sear each medallion for 4–5 minutes per side, turning occasionally until the chicken is crispy and golden and the pork reaches 63°C (145°F) internal temp.
In the last minute, brush with butter for extra richness.

🔥 Oven-Roasting Method:

Preheat oven to 200°C (400°F).
Heat a skillet over medium heat and sear each medallion 2 minutes per side until lightly browned.

STEP 4

Transfer to a baking tray and roast for 12–15 minutes until the chicken is crispy and the pork is tender.
