Pork and Veggie Stir-Fry

INGREDIENTS

  • 500g lean pork strips
  • 1 tbsp sesame oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tbsp low-sodium soy sauce
  • 2 garlic cloves, minced

STEP 1

Heat sesame oil in a wok over medium-high heat.

STEP 2

Add pork, stir-fry until browned. Remove and set aside.

STEP 3

Toss in garlic, broccoli, bell pepper, and carrot. Stir-fry 5–7 minutes.

STEP 4

Return pork, add soy sauce, cook 2–3 more minutes.

STEP 5

Serve hot over brown or cauliflower rice.
