High in Protein Pork Chicken Stir-Fry

Steynsburg pork

INGREDIENTS

For the stir-fry:

  • 250g (9 oz) pork tenderloin or pork shoulder, thinly sliced
  • 250g (9 oz) chicken breast or thighs, thinly sliced
  • 2 tbsp vegetable oil (peanut or sesame oil works great)
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 small carrot, thinly sliced
  • 1 cup sugar snap peas or green beans
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 green onions, chopped (for garnish)
  • Sesame seeds, for garnish

For the sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar (or lime juice for a citrusy twist)
  • 1 tsp sesame oil
  • ½ cup chicken broth (or water)
  • 1 tsp cornstarch (mixed with 2 tsp water to thicken)
  • 1 tsp honey (optional, for balance)

STEP 1

Prep the Protein

  • Thinly slice pork and chicken against the grain. Pat dry with paper towels to ensure they sear nicely.

STEP 2

Make the Sauce

  • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, chicken broth, and cornstarch slurry. Set aside.

STEP 3

Stir-Fry the Meat

  • Heat 1 tbsp oil in a large wok or skillet over high heat.
  • Add pork slices and stir-fry for 2–3 minutes until browned but not fully cooked. Remove and set aside.
  • Add chicken to the same pan and stir-fry for 2–3 minutes. Remove and set aside with the pork.

STEP 4

Cook the Veggies

  • Add the remaining oil to the pan. Toss in garlic, ginger, onion, and all the vegetables. Stir-fry for 2–3 minutes until just tender but still crisp.

STEP 5

Combine Everything

  • Return pork and chicken to the pan. Pour in the sauce and toss everything together. Cook for 2–3 more minutes until the sauce thickens and the meat is fully cooked.

STEP 6

Garnish & Serve

  • Top with sesame seeds and green onions. Serve immediately over jasmine rice, brown rice, or noodles for a complete meal. 🍚

Optional Variations

  • Spicy Kick: Add chili flakes or sriracha to the sauce.
  • Low-Carb: Swap rice for cauliflower rice or serve on a bed of steamed broccoli.
  • Nutty Twist: Add roasted cashews or peanuts for crunch.

Chef’s Tips

  • Add a slice of prosciutto between the pork and chicken for extra depth.
  • Use a smoky BBQ glaze if you prefer a bolder, outdoor flavor.
  • Pair with a crisp white wine or light Pinot Noir for a perfect dinner.
