INGREDIENTS

  • 1.5 kg pork loin
  • Salt & pepper
  • 3 tbsp olive oil
  • ½ cup honey
  • 2 tbsp wholegrain mustard
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 cup fresh cranberries
  • ½ cup chicken stock

Instructions

  • Preheat oven to 180°C.
  • Season pork generously with salt and pepper. Sear all sides in hot oil until golden.
  • Mix honey, mustard, soy sauce, and garlic.
  • Place pork in a roasting dish, brush with glaze, add cranberries and stock.
  • Roast 1 hour, basting every 15 minutes.
  • Rest 10 minutes, slice, spoon over pan juices, and serve.
