Crispy Pork Belly with Apple and Sage

INGREDIENTS

  • 1.2–1.5 kg pork belly, skin scored
  • 1 tbsp salt
  • 1 tsp pepper
  • 2 apples, sliced
  • 1 onion, quartered
  • Fresh sage leaves
  • 1 cup apple cider

instructions

  1. Pat pork belly completely dry. Rub salt into the skin, pepper on the meat side.
  2. Scatter apples, onion, and sage in a roasting tray. Pour in cider.
  3. Place pork belly on top.
  4. Roast at 240°C for 20 min to blister the skin.
  5. Reduce heat to 160°C and roast 1 hr 30 min.
  6. Rest, slice, and spoon over the apple-sage juices
